- In a small saucepan, melt the butter over medium heat. Continue cooking, stirring frequently, until the butter foams and turns golden brown with a nutty aroma, about 5–7 minutes.Transfer the browned butter to a large mixing bowl and let cool for 10 minutes.Whisk in the brown sugar and granulated sugar until smooth.Add the egg, egg yolk, and vanilla extract and whisk until fully combined.Add the flour, baking soda, and kosher salt. Stir until just combined.Fold in the chocolate chips or chopped chocolate.Cover the dough and refrigerate for 1 hour.Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.Scoop large balls of dough, about 3 tablespoons each, and place them on the prepared baking sheets.Bake for 10–12 minutes, until the edges are golden brown and the centers still look slightly underbaked.Sprinkle with flaky sea salt if desired.Let the cookies cool on the baking sheet for 10 minutes before transferring to a cooling rack.
