Creamy Coconut Chia Seed Pudding
This creamy coconut chia seed pudding is an easy make-ahead breakfast or healthy snack. Made with just a few simple ingredients, it’s naturally dairy-free, lightly sweetened, and perfect topped with fresh fruit.

- 1 Mixing Bowl
- 1 Whisk
- 1 Measuring cups
- 1 Measuring spoons
- 2 Mason jars
Ingredients
- 4 tablespoons chia seeds
- 1 cup coconut milk Trader Joes Organic Coconut Milk Can
- 1 cup plain greek yogurt
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 tablespoon maple syrup
Instructions
- In a medium mixing bowl, whisk together the coconut milk, Greek yogurt, vanilla extract, cinnamon, and maple syrup until smooth.
- Add the chia seeds and whisk well to combine.
- Let the mixture sit for 5 minutes, then whisk again to break up any clumps.
- Cover and refrigerate for at least 4 hours, or overnight, until thick and creamy.
- Stir before serving and divide into jars or bowls.
- Top with fresh fruit, granola, or shredded coconut if desired.
Notes
Store covered in the refrigerator for up to 4 days.
Add more maple syrup if you prefer a sweeter pudding.
Top with berries, banana slices, nut butter, or toasted coconut.
For a thinner consistency, stir in a splash of coconut milk before serving.
