Ingredients

  • 4 tablespoons chia seeds
  • 1 cup coconut milk Trader Joes Organic Coconut Milk Can
  • 1 cup plain greek yogurt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 tablespoon maple syrup

Instructions

  • In a medium mixing bowl, whisk together the coconut milk, Greek yogurt, vanilla extract, cinnamon, and maple syrup until smooth.
  • Add the chia seeds and whisk well to combine.
  • Let the mixture sit for 5 minutes, then whisk again to break up any clumps.
  • Cover and refrigerate for at least 4 hours, or overnight, until thick and creamy.
  • Stir before serving and divide into jars or bowls.
  • Top with fresh fruit, granola, or shredded coconut if desired.

Notes

Store covered in the refrigerator for up to 4 days.
Add more maple syrup if you prefer a sweeter pudding.
